On a recent flex day (we can accrue flex hours at work and it's always fun to save them up and take a whole day off) I let Oscar have the car for the day so he could drive himself and Byron to school and home again. As they left for the day, Byron told me that I needed to make scones for when they got home, for afternoon tea!
OK.
At first I said yes just to humour him, but then decided to surprise him by having hot scones, and all the trimmings, waiting for when they walked in the door.
The timing was crucial; scones need to be eaten fresh from the oven, and I nailed it (if I do say so myself LOL). I was taking the scones from the oven as they walked in the door and the first words out of Byron's mouth were - did you make the... and then he smelled them and his face lit up!!
Proof:
Let me tell you just how well these scones went down (just look at Byron's face). Good mother karma, I tell you.
And my recipe, about the easiest, foolproof recipe E.V.E.R.
Scones
3 cups of self raising flour
1 cup of cream
1 cup of lemonade (stay with me people!!)
Put all the ingredients into a bowl and mix together lightly. When combined tip onto a lightly floured surface and pat out to about 5cm's thick and cut out with a round cutter. You can gently push the scraps back together and pat out and cut again till you have no mixture left.
Place on a baking tray lined with baking paper. Cook in a hot oven (200C) for about 10 - 12 minutes till lightly browned on top.
Place into a clean tea towel and serve with whipped cream and strawberry jam.

YUM! Now you've got me wanting scones :-). I've made the lemonade ones before and they are delicious.
